Saganaki (Flaming Cheese)

Ingredients

  • 1 pound soft Kasseri or Kefalotire cheese2 tablespoons brandy
  • 1/2 lemon
  • 2 tablespoons butter or margarine, melted

Instructions
  • Heat the broiler. Cut the cheese into three wedges. Place on a buttered pan with sides. Pour melted butter over cheese and place under broiler for 4 to 6 minutes. Broil until the cheese is bubbly and brown remove from broiler; pour brandy over the cheese and light quickly with a lighter or match. Say, "Opah!" then douse with lemon as the flame is going out. Serve immediately.
